Meals Made in Twenty ~ Honey Maple Garlic Shrimp & Veggies Shish Kabobs
The great thing about kabobs is that you can customize them anyway. The ingredients are endless and sometimes I make them with only fruit. For the kabobs I made, you’ll need:
1 lb uncooked shrimp
4 corn cobs, chopped
1 large vadilla onion
1 large yellow bell pepper
1/2 cup Olive Oil (Split between veggie and shrimp)
*garlic, maple herb seasoning, salt, and black pepper
**Soak the skewers in water for about fifteen minutes to prevent the food from sticking to the wood.
In one bowl season shrimp with garlic, maple herb seasoning, salt and black pepper then tip 1/4 of olive oil. Stir and set aside. In another bowl cut corn in fours and veggies in bite size pieces. Then sprinkle salt and black pepper then add remaining olive oil.
Now Begin adding ingredients to Skewers
I like to slide the corn on the bottom of the kabob to help keep all the pieces from falling off the bottom. Plus, the corn makes it super cute. Add at least two- three pieces of shrimp throughout skewer and finish adding corn on each end. Mix onion, bell pepper, and cherry tomatoes throughout skewer in between corn and shrimp.
After adding all ingredients to skewers place kabobs on cooking sheet. Sprinkle with more maple seasoning then place kabobs on the grill away from fire. Rotate kabobs every 2-3 minutes to assure each side of the food is being cooked all the way through.
Cook until veggies are tender, approximately 5 minutes per side.
Great with salad or rice dishes.
