Meals Made in Twenty - MANGO SHRIMP SALSA

Last night the girls and I decided to have a fiesta, not only to celebrate the love we have for each other but the love we have for delicious tropical culinary delights. Colorful, refreshing, and tasty Mango Shrimp Salsa is a fruity seafood feast that is perfect for parties or as a meal on hot summer nights.

We paired this dish with homemade nachos and frozen berry rum daiquiris. Cocktails stay in rotation! While the food was being prepped, we laughed, had girl code conversation, and sipped until we started two stepping. Good spirits made the time pass by swifter. 

Before heading over to my girlfriend's house I stopped at Publix to grab the ingredients and the shrimp WAS on SALE... okurrrrrr! Definitely purchased a pound under $10. After stopping at the seafood bar I continued to grab the remaining ingredients then headed on over to my friend's home.

The dish took less than 20 minutes and complimented the cocktails and nachos. Super quick easy and again delightful!

Mango Shrimp Salsa

 Prep Time 25 minutes

 Total Time 20 minutes

 Servings 4 -6 servings


  • 2-3 lg ripe mangos *diced
  • 1 lb precooked shrimp 31-40 per lb *diced
  • 2 roma tomatoes *diced
  • 1 small bunch cilantro *chopped about 1 cup
  • 1 small jalapeño *finely diced see tips about for roasting
  • 1/2 med red onion *finely diced
  • 2-3 med ripe avocados *diced
  • Juice of 2 limes
  • salt & pepper to taste


Prepare first 6 ingredients. Place in a large bowl and mix well. Add avocados, lime juice, salt and pepper. Gently mix until combined. Chill until ready to serve! We were so hungry and I didn't get a chance to take some bomb ass pictures like I usually do! Enjoy!
