Meals Made in Twenty - CREOLE RUBBED SALMON WITH MANGO SALSA
Sunday dinner usually calls for something special to remind you of home. I know for me it sure does! And for this past Sunday I felt the need to cook my favorite...Salmon, with a crafted Caribbean twist by adding a mango avocado salsa. Absolutely delicious and absolutely amazing! The sides that complimented this fabulous creation was brown rice and steamed broccoli, something super simple. Overall, the colors throughout this dish was vibrant, colorful and the taste took my cooking skills to a whole 'notha' level... extremely flavorful and I couldn't get enough!
Ingredients for the Salmon
2-3 Salmon fillets (mine had skin)
1/2 teaspoon garlic powder
1/2 teaspoon chili paste
1 teaspoon creole season
1/8 teaspoon ginger
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 tablespoon brown sugar
Combine all the ingredients except for the salmon. Rub the salmon down with the combined spices (no need to rub down the skin side if you have skin).
Broil the salmon in the oven for about 7-10 minutes or until it flakes with a fork. Side Note: This is even better on the grill! Look how yummy the slamon looks below!
For the Salsa:
1 ripe mango, cut into chunks
1/2 cup avocado
1/2 bell pepper, orange or red for a pop of color
1 clove garlic, minced
1/2 of a red onion, chopped small
The juice of 1 lime
1/2 teaspoon sugar
1/4 cup chopped fresh cilantro
1/2 cup corn, drain corn before adding
Sprinkle salt and pepper to taste then add all of the ingredients mix well and set aside to add on salmon once complete.
In the end serve salsa over salmon with any kind of rice of your choice. We used brown rice as a healthy option but jasmine rice will taste just as good. The mango salsa is awesome and even if you don't make the salmon, PLEASE make the salsa. It's amazing. Try it with any tortilla chips, we used blue chips from Sprouts and had a great lunch the next day. Enjoy!
